Nuan was born in Thailand and was raised by her mother, until she was orphaned at the age of thirteen. After that she had to work to support herself. She was moved around from family to family while she worked at restaurants in Bangkok, Rayong and Ubonrachatani. She ended up living with the family of a friend in Ubonrachatani and worked as the cook in the family restaurant. The restaurant was located across the street from the provincial technical college and during this time she refined several of her recipes. The restaurant became the favorite amongst the students often having a line that stretched around the corner. Nuan credits her keen sense of smell, which allows her to smell the food while it cooks and determine what seasoning or spices are needed to give it the full flavor.
